I found the lectures about metabolism and blood sugar quite interesting. Both of my parents are diabetic or prediabetic (they are doing all right, so no worries!), so I’ve also been advised to be careful about my diet. I found the case study on the patient who only eats carbs and doesn’t realize he’s consuming sugar somewhat humorous– though I would consider the meals back at home quite balanced, there is white rice present practically every time. Even in college, I’ve found it difficult to eat less carbs due to the limited food options and my own sensory restrictions (they took out the stove in Coburn’s kitchen, so I can’t even cook anymore…?).
I’m not an expert in diet or public health policy, by any means, but I do think both education on the more technical side (glycogen storage and breakdown, glycolysis, all the things we covered in lecture) and actual physical ease of food accessibility go hand in hand in preventing chronic conditions such as diabetes. I just think it’s worth considering, since many of us plan to go into healthcare. 🙂
