I found the lectures about metabolism and blood sugar quite interesting. Both of my parents are diabetic or prediabetic (they are doing all right, so no worries!), so I\u2019ve also been advised to be careful about my diet. I found the case study on the patient who only eats carbs and doesn\u2019t realize he\u2019s consuming sugar somewhat humorous\u2013 though I would consider the meals back at home quite balanced, there is white rice present practically every time. Even in college, I\u2019ve found it difficult to eat less carbs due to the limited food options and my own sensory restrictions (they took out the stove in Coburn\u2019s kitchen, so I can\u2019t even cook anymore\u2026?).<\/p>\n
I\u2019m not an expert in diet or public health policy, by any means, but I do think both education on the more technical side (glycogen storage and breakdown, glycolysis, all the things we covered in lecture) and actual physical ease of food accessibility go hand in hand in preventing chronic conditions such as diabetes.
